If I had to sum this chicken salad wrap recipe up in one word, it would be easy. Instead of making fresh chicken, I used leftovers from the night before, a premade salad mix, and wrapped it all up. Bada Bing! This chicken salad wrap is light, perfect for taking on the go, and quick to throw together.
The traditional chicken salad is quite a bit different. In this recipe, I’m using things I already have and throwing them all together. The best part is that you can customize it in many ways to fit your taste. For example, I used a Honey mustard dressing and garlic hummus spread on the tortilla in this recipe. I think an Asian salad mix or the buffalo chicken salad would be tasty too!
First, I diced up the leftover chicken from the night before. Next, I found some hummus, a bottle of honey mustard dressing, and a few slices of provolone cheese.
The next step is to mix the salad with the chicken and the dressing. The quantities here depend on how much you want to eat and how wet you like your salad. I would only add the salad dressing to what you plan on eating instead of making a whole bowl to save for later since it will get soggy.
Chicken Salad Wrap Assembly:
Step one in assembling the wrap is to spread a layer of hummus onto the tortilla. Then, add a few slices of cheese and the chicken salad mix. The first time I made these, I was obviously hungry because I overloaded the tortilla and had trouble wrapping it. So this time, I put a little less, and it wrapped nicely.
