As our kids grew older and had families of their own, our Christmas Day schedule changed as we added additional families and other places our children needed to be.
So instead of Christmas dinner, we took over Christmas morning breakfast…
Colleen made her amazing Cake Donut Bread Pudding, a recipe to come on a future blog, and I made our traditional family Breakfast Casserole.
A Christmas morning tradition at our house for over 15 years now, this amazing casserole can even be made the day before and simply popped in the oven Christmas morning and baked while opening gifts with everyone.
This evening it was my turn to make dinner… let’s see… something simple… ahhh, one of our favorites came to mind, my Breakfast Casserole. When Colleen got home from work it was just coming out of the oven. It really is that simple. With the scent of maple breakfast sausage wafting through the house, she knew exactly what I had made for dinner.
And what makes it so nice… we have leftovers for several nights.
Ingredients:
- 1 bag frozen hash browns
- 1 onion, chopped
- 1 bell pepper, chopped
- 10 eggs
- 1 16oz bag Colby Jack Cheese shredded
- Optional: cooked bacon, sausage or diced ham
Instructions: Saute onions and bell peppers in a pan with a little olive oil. In a bowl whisk eggs together add salt and pepper. Set aside. In a large buttered casserole dish add hash browns, add salt, and pepper, be careful not to overseason. Add onions, bell peppers, eggs, cheese, and breakfast meat, mix together. Add remaining cheese on top. Optional garnish with green onions and cilantro. Bake in a 350-degree oven for 1 hour or until eggs set up.
Once you taste this easy-to-make casserole, it will definitely be a new family favorite and maybe even a tradition.
